recipe: carrot & apple flax muffins

try these deliciously healthy muffins, perfect for snacking, school lunchboxes and a guilt-free sweet treat! super easy to make, and full of goodness too!ingredients1 1/2 cup whole wheat flour3/4 cup ground flax seed - (for freshness, buy our TK whole flaxseed and grind as you need it in a coffee or spice grinder)3/4 cup oat flour (by grinding oats in blender)1/2 cup brown sugar2 tsp baking soda1 tsp baking powder2 tsp cinnamon2 cups shredded carrot2 cups shredded apple3/4 cup milk2 eggs1 tsp vanilla essence methodin a large mixing bowl, combine flours, seed, sugar, baking soda, baking powder, cinnamon, carrot and applein a separate bowl whisk together milk, eggs and vanilla essencecombine the wet and dry ingredients together, stirring until just moistenedfill muffin papers and bake at 175°c for 10 minutes, or for larger muffins bake for 15 minutesremove from oven once golden and leave to cool in tray before transferring to a wire cooling rack  

recipe: corn & cucumber salsa

this delicious tasty salsa is the perfect partner with pasta, summer salads, cheese & crackers and chicken.  ingredients:1 cup corn kernels1/2 cup cucumber - deseeded (optional) and finely diced1/4 cup red capsicum - finely diced1 handful basil - finely chopped1 clove garlic - crushed1 tbsp white wine vinegar3 tbsp tk citrus oil method:toss ingredients together in a bowl and serve

recipe: red pepper chilli pesto

this sharp-tasting chilli pesto has a real kick in every mouthful! deliciously roasted red pepper, combined with nuts, garlic and our tk chilli & lime oil, it promises to add a little fiery excitement to a whole variety of recipes! ingredients:2 red capsicum1/2 tbsp olive oil1/4 cup tk flax seed oil - chilli & lime1 1/2 cups cashew nuts1/4 tsp salt2 cloves garlic up to 1/4 cup water method:cut the capsicum into quarters and remove seedsplace on an oven tray with the nuts and drizzle with a little olive oilbake for 20 minutes on medium heatcombine with remaining ingredients in a food processoradd a little water if necessary - blend well until mixed, with a few nut pieces still showingthis will store in an air-tight container in the fridge for up to 1 week

wake up with our berry breakfast smoothie for a great start to your day! berries are rich in antioxidants and vitamin c therefore have huge health benefits! ingredients:1 cup Milk1/2 banana1/2 cup frozen berries2 tbsp protein powder/cottage cheese (optional)1 tbsp tk flax seed oil original1/2 cup ice (optional) method:in a blender, add the milk and oiladd remaining ingredientsblend together until desired consistency is reached - note, ice cubes will help to thicken the smoothie  

recipe: healthy hummus

beautifully soft and creamy, this hummus is a perfect match with crackers, cucumber, carrot sticks or as a spread over pita breads. experiment with this recipe and try one of our infused oils to add a different flavour to your hummus! ingredients:400g can of Chickpeas1/2 tsp ground cuminpinch of salt & pepper1 clove garlic - peeled and finely chopped, or crushed1 1/2 tbsp tahini4 tbsp tk flax seed oil - try with citrus, chilli & lime or garlic! method:In a food processor, pulse the chickpeas, cumin, garlic and tahini until smoothadd salt, pepper, oil and lemon juice to tasteserve as a dip or spread
